Due to their sour and bitter taste, capers are used in mayonnaise, salads, cold sauces (e.g. tartar sauce), mustard, pizza toppings and dishes made of rice, pasta, meat and fish (e.g. with smoked salmon). As heat can reduce the taste of capers, it is recommended to add them only at the end of cooking.
